Pickled herring

I think every country has “national” food that makes many wonder why they eat it. Food that the rest of the world wouldn’t eat even if they were paid to do it. For example I don’t get why some countries insists on eating haggis. I know that it comes from an era where you ate everything on animals but now a days it’s crazy. I don’t think it’s wrong to eat it but it’s not something I crave. Sweden has pickled herring.

I don’t eat pickled fish but many in Sweden do. It’s often eaten during holidays but lots eat it more often. I don’t get how anyone willingly put this in their mouths. It’s raw fish in vinegar. It tastes like………fish in vinegar. The fish texture and vinegar taste are sickening. The texture is soft and hard almost like pickled mushrooms. I’ve intended to learn to like them on many occasions but I can’t even have a small bite. My mom said I used to like them but I can’t believe I did.

Vegan burger

I think I love everything that’s vegan. There are many vegan ready meals to choose from. That makes eating vegan no trouble at all. I always make vegan  casseroles and those kinds of food myself. Some things like vegan hamburgers I have to buy cause I don’t know how to create a tasty burger. Haha I used vegan in every line!

I have found a yummy green burger. It’s a green kale burger. Green kale is healthy and that feels good when you include it in a meal. I think they taste better than meat burgers. For all of you that want to eat more vegan or vegans that don’t know what to eat sometimes buy green burgers. There are burgers for everyone.

I served this kale burger with potato gratin. I sliced potatoes and mixed them with cream and milk. I didn’t have plant based cream and milk and used normal cows things. I would have cooked with vegan milk if I had it. I baked the gratin and the burgers in the oven. 200 C 30 minutes. Yummy.

Buying

-Honey we only got 24 eggs.

-No! You have to buy more.

24 eggs. That’s enough to make 6 cakes. 5 omelettes. That makes more scrambled eggs and egg sandwiches than you can eat. And they expire in 4 days………..

Oven pasta.

Sometimes I manage to make a dinner that I didn’t think would taste as good as it did. You know when you put together many ingredients and you don’t know how it will taste . Today I made this kind of dinner and it was more than good. Oven cooked bacon and fresh pasta in a tin.

I fried sliced bacon in a pan until it became crispy . I always cook bacon a bit before I put it in the oven. You get that yummy texture and you know that the bacon is cooked. Raw bacon is not good.

In an oven tin I put fresh pasta. I always use fresh pasta when I’m doing pasta dinners that has to do with the oven. You don’t have to boil fresh pasta before you put it in the oven and that makes everything smoother.

I added the bacon to the pasta. I also added sugar snap peas, butter, sliced carrots, milk, salt and pepper. I also put some cheese on it.

I baked it in the oven at 200 C for 20 minutes.

Vegan dinner

I sometimes make vegan dinner. I think it’s no problem to do that. For example there are many vegan ready meals. You don’t have to be a good cook to make vegan meals. You have to like vegetables and those things though but if you don’t do that you don’t become vegan.

This dinner is a rice curry. The base is a frozen rice mix. It’s rice, peas, corn and peppers you buy frozen. You could buy the ingredients separately if you don’t find something like the rice mix. I cook the mix in plant based butter for a while.

I always use curry paste when I cook these dinners. This is green curry paste. There are ready made curry sauces but I want to decide myself how spicy I want it. I add the curry and also coconut milk. I love coconut milk.

Vegetarian dinner

I love vegetarian food. Vegetarian doesn’t mean I don’t eat any animal products. Vegetarian food for me is to not eat meat or fish but eggs and milk are included. I do eat meat and fish but sometimes I want to clean my body from that. Haha hope you know what I mean!

I love most vegetables, lentils and grains and that helps when it comes to cooking vegetarian food. I have been a full time vegetarian a couple of times in my life. Then I ate lots of lentils and those things to get protein in my diet. Now I don’t have to but I do enjoy lentils and beans.

Today I made a vegetarian casserole. I put everything in the casserole. I fried red cabbage, tomatoes, carrots, peppers, onion and garlic in plant based butter. I added salt, pepper, tomatoe puree, milk and cream. I served it with rice. Use plant based milk and cream instead and you got a vegan dinner. Yummy.

 

Nothing

I never thought my christmas holiday would be this long. Not the christmas holiday in itself but my holiday from the blog. I was thinking I would take some days off but the off days kept adding and here I am weeks later not getting how fast time flies.

Christmas was lazy and it was Kajsa me and my mom spending it together. I love that it wasn’t stressful like it can be. All we did was eat and do nothing at all. I made the dinner I like. Almost everyone in Sweden have to have pickled herring on the christmas table. I can’t stand it. I made ribs with oven baked vegetables and pickled red cabbage.

Salad

I think that salad is a wonderful thing. You can put what you want in it and it can be healthy. Healthy if you don’t add unhealthy things in it. I could eat salad often. I try to.

There’s a side to salads that make me not eat them all the time. The cutting and slicing! I know it’s a first world problem but it takes a long time to make a salad. When you come home late you don’t want to spend the rest of the day in the kitchen preparing a salad. That and also that you have to buy many ingredients. I often forget to buy some of the things I want in the salad too and never get the salad I wanted.

There’s something that helps with all that. Ready made salad. I’ve found that it’s better than making a fresh salad. It’s fast and costs less than if you would buy all the things in it. This Ceasar kit from Dole is delicious. I buy grilled chicken and put in it. The kit contains lettuce, crutons, cheese and dressing. Yummy.

Vegan salad

I try to eat healthy sometimes. I often eat not that healthy and when I’ve done that for a while I have to clean my body. That means no meat and less sugar.

When I had the latest “cleaning” I made a vegan warm salad. Haha I know salad, or lettuce, is vegan in itself. Often though and what I mean, is that a salad has meat, fish or something like that added to it.

A vegan salad that only has veggies in it can be a bit “too little”. Only raw veggies almost never fills me up anyway. Warm veggies do if I pick certain ones. This salad was delicious. The things I used in the salad were oven baked potatoes, carrots, broccoli and brussel sprouts. I mixed them with plant based butter and salt and pepper. I love all those ingredients. I also put raw tomatoes and spinach in the salad. I didn’t warm them because I like them better raw.

The rest of the meals that day were oat porridge, scrambled eggs and rice cakes. I know eggs are not that healthy but my body craves protein. Eggs are better than nothing. I exercise lots and have to eat balanced.
