I feel that you can’t do much about your mental health. You take your pills your doctor has prescribed. You see your psychologist. I do what I’m supposed to do. I don’t feel it helps with anything actually but I have to trust the professionals. I think I would feel even more ill if I didn’t do what they tell me to. That’s why I do what they tell me.

I’m convinced you can do something when it comes to the physical side though. My advice is to do what ever makes you feel good. If it doesn’t hurt anyone do it. My favorite thing is to treat myself to cake and food I love. I don’t like to cook but when I make something I try to cook my favorite food. I also like to buy cakes, candy and everything I find delicious. I don’t drink alcohol or smoke. I try to eat healthy but it’s not funny never treating yourself to anything.

The bread “departement” in the grocery store I buy the main part of my food in has lots of delicious treats. They have bread of course but it’s the sweet treats that interests me. I feel my depression getting less painful when I look and smell all the cakes and candy. I often buy lots of different cakes to have many sweets to choose from at home. I don’t over eat or anything but a piece of cake a day makes everything better.

Milk

I have a first world problem for you.

-I just drank a glas of milk that had it’s expiration date yesterday!

-Oh no. What should we do? We have to call for an ambulance. I tell them you had a day old milk. That will have them put you first and they will prioritize you before heart attacks and those things.

-There is an emergency number you can call when you think you’ve been poisoned. I feel weak do you think I will have to have surgery?

-Probably.

Dinner

I’m that type of person that cook just because I have to. I’m the one in the household that find making dinner fine but nothing more than that. The rest of the family finds it painful, in lack of a better word. I’m also that type of person that walks around aimlessly in grocery stores without any idea what to buy. I never have any idea or get any idea of what to buy. I look at shelves of food but all I see is nothing. I don’t like to cook and all the food screams “takes too long to cook” or “to make that I have to buy lots of another ingredients”. I often find myself buying processed food like ready made meatballs.

Today I made an effort and actually made dinner from scratch. It’s very simple to make. Spaghetti bolognese. The ingredients I use in my bolognese are of course pasta. For the sauce I mix minced meat, tomatoe puree, onions, milk, whipping cream and spices.

I know it’s not a fancy dinner but for all of you struggling with what to cook it’s an idea for what to make. I don’t like raw vegetables and I serve my dinner with fruit instead. This is kiwi fruit. I think lots of fruits are delicious. I need some vitamine C to go with my dinner.

Smoking ban

I love all bread. I crave bread. I don’t know what kind of bread’s that are popular in your country. In Sweden ” Åkes (male name) hönökaka” is popular. It’s a flat soft bread.

I hadn’t bought it in a while and when I bought it recently I saw a funny thing on the package. There is a picture of “Åke” on it. I’m sure that he smoked a pipe before. Now he doesn’t. There’s a smoking ban everywhere. Now a smoking ban even on bread packages. I like that you can’t smoke everywhere but on bread…… I know why Åke has quit smoking. Smoking is bad and that could make you think the bread is bad.

I don’t think anyone has thought about “Åke’s” not smoking anymore. I don’t know why they removed the pipe. I don’t think anyone making a “Åke” sandwich saw the pipe and thought they wan’t to smoke. I have never made a sandwich and suddenly had a craving for pipes.

Vegan hamburger

Today’s dinner: vegan hamburger.

Most vegan burgers are frozen and already cooked. They are delicious. This hamburger however was frozen but raw. It was bigger than most vegan burgers.

I cooked it the way I cook raw meat burgers, in a frying pan. I seasoned it with salt and pepper.

The burgers tasted like sausages. We didn’t have much vegetables. We had onions and tomatoes and used that. We also added ketchup, mustard and hamburger dressing to the burgers.

Prawn bomb

I don’t know why take away food tastes better than food you make. I’ve never figured out how to make pizza. I’ve made it myself but it never tastes as the ones you buy from pizza restaurants. That’s one example. I would never try to make indian food.

In Sweden sandwich cakes are one of our favourite take away food. It’s layers of bread with different fillings. The base is mayonaise and you can mix it with whatever you want. Today we had a “prawn bomb”. To no ones surprise it’s a sandwich cake filled with prawns. It’s the best take away sandwich cake.

I would never try to make a prawn bomb myself one more time because in a moment of bravery I did. It seems easy but it’s not. You think all you have to do is put mayonaise and prawns on bread. I tried to make it but it came out a mess. It became a disgusting pile of soggy bread and runny mayonaise. There were crawfish everywhere.

Pancakes

I think many think (many think) of american pancakes whenever you mention pancakes (many pancakes). The thick smaller pancake. It contains baking powder. In Sweden pancakes are crepe like flat pancakes. I like them. I’ve tried the american pancakes but I didn’t think they tasted that good. I’m used to the swedish pancake and I think that’s why I didn’t like it.

I never make swedish pancakes from a recipe because I ‘ve made them since I was very young. I know what texture the pancake batter should be. I think you would love these pancakes and I found a recipe that looked good.

This makes 8 pancakes.

3 dl wheat flour

6 dl milk

3 eggs

0,5 tsp salt

2 tbs butter (I always use more)

Melt the butter. Mix the butter and the rest of the ingredienser together.

Use a little bit of butter in the frying pan for every pancake.

Fill the whole (hot) frying pan with a thin layer of pancake batter. Flip the pancake when it sets.

Serve with jam or whatever you prefer. I serve mine with a mountain of sugar. Delicious.

Vegetarian bacon

I try to eat vegetarian food often. I try to eat vegetarian food more often than I eat meat. I don’t think meat is good for me. I feel sick both in body and mind when I eat too much meat. I would like to eat strictly vegan food but I can’t because I think plant based milk and those things are……. not tasty. I’ve tried many plant based products but I can’t drink or eat them. Vegan food is tasty like vegan sausages but not the “milk” products. 

I like the vegetarian diet better. I avoid meat but I drink milk and eat eggs. When it comes to vegetarian and vegan  food too there are many ready made alternatives to choose from. I have many vegetarian ready made things in my freezer. It’s no trouble to cook vegetarian things from scratch like tomatoe sauces but sometimes I like to make something fast.

My favorite vegetarian ready made food is soy bacon. It tastes like bacon and is delicious in pasta sauces. The texture is like a sausage, which isn’t that nice, but because I mix it in sauces I don’t think about it. I like meat bacon but because it’s meat I have tried to replace it with the vegetarian alternative.

Fish fingers

I know this is a first world problem!

I made fish fingers for dinner today and the box it came in got me thinking. First of all it had 15 fish fingers in it. Our familj consist of an even amount of members. That means someone will get one fish finger less at one dinner. That was me. I only got three pieces of fish because I’m like that. I rather have me missing out than anyone else.

The second thought I had while making dinner was this. It said on the fish finger box the fish consisted of 100 % fish. I know they meant there wasn’t added artificial things to the fish but think about it. You buy fish because you want fish. If I wanted pork I would have bought pork. Important thoughts I know.

Fish

I love fish however I don’t eat it often. You almost have to have sauce with fish. Fish itself doesn’t taste that good it’s the sauce that does everything. It’s the sauce that keeps me from making fish dinners. I don’t know how to make fish sauce. There are ready made ones but I don’t enjoy them. I’ve tried to do make sauces but didn’t succeed.

In Sweden we have fish bolls. That’s what we call them! It’s minced fish shaped into balls. I don’t know what else you could call them. Fish balls doesn’t sound better. Anyway I feel satisfied with naming them fish bolls.

Swedish fish bolls come in tins with different sauces. The sauces are delicious. I couldn’t make them better myself. I don’t know if you can get them anywhere else than here but if you can try them. Today we had fish bolls in lobster sauce. I cook them in the oven. I put them and butter in a oven safe baking dish. I like to serve oven baked potatoes with the fish. I slice the potatoes and mix them with butter, salt and pepper in a separate baking dish. I added sugar pea snaps to the fish. I cook it all in the oven. 200 C 30 minutes.
