Salad

I think that salad is a wonderful thing. You can put what you want in it and it can be healthy. Healthy if you don’t add unhealthy things in it. I could eat salad often. I try to.

There’s a side to salads that make me not eat them all the time. The cutting and slicing! I know it’s a first world problem but it takes a long time to make a salad. When you come home late you don’t want to spend the rest of the day in the kitchen preparing a salad. That and also that you have to buy many ingredients. I often forget to buy some of the things I want in the salad too and never get the salad I wanted.

There’s something that helps with all that. Ready made salad. I’ve found that it’s better than making a fresh salad. It’s fast and costs less than if you would buy all the things in it. This Ceasar kit from Dole is delicious. I buy grilled chicken and put in it. The kit contains lettuce, crutons, cheese and dressing. Yummy.

Depressed

I have hit the lowest low in my depression. I’ve felt the depression coming a long time now and it came with full force a while ago. I feel tired and have lost the will to do anything. I should be used to feeling like this but I don’t think you ever get used to it. I feel depressed all the time but not like this. There’s an expression in Sweden “walking into a wall”. Even if you haven’t heard that it speaks for itself. You walk into the wall because you’re too depressed and then you’re stuck in that feeling.

The first sign of deep depression for me is feeling sick like I’m going to throw up. This goes on for days and I loose all strenght. I’ve tried to take care of myself but there was nothing I could do about it. I feel like crying but I don’t.

A big reason for my depression is that I don’t have the medicines I should have. My doctor have given me different medicines to try. Nothing has helped. A while ago he put me on a anti-anxiety medicine. I got physically sick from it. I told him that I got sick but he wouldn’t listen. He told me there were no side effects like I experienced to it and I should keep taking it. I tried to keep taking it but I couldn’t. I got tired of trying medicines that made me sick and cause of that I quit the ones that made me sick. I have no anti depressant medicine at the moment cause of that.

There’s not only depression at the moment. Today we had “sandwich cake” for dinner. A big sandwich cake! I love it.

Omelette

I can’t eat onion. I can but my bowls get crazy. When I eat it often I get sick. I love to use onion when I cook but I have to think about how often I have eaten it before I cook that day.

I try to eat vegetarian all the time and I think onions makes vegetarian dishes tastier. Or I think onions makes all dishes, vegetarian or no vegetarian, better. I love the taste of onions. Because my bowls can’t take onions I’ve had to find substitutes for it. A substitute that works well are olives. They can’t replace onions but I like the saltiness of the olives. Omelettes are one of my favorite things to eat. I like bacon in omelettes but when I want a veggie one I’ve used onions before. Now I’ve used olives instead for a while and I don’t miss onions.

This omelette has olives, tomatoes, sugar snaps and peppers in it. I used green olives cause I think they’re tastier.

Almost vegetarian

I have come to a conclusion that an almost vegetarian way of eating is best for me. With almost vegetarian I mean vegetarian but where eggs and milk are included. I know there is a word for that type of “vegetarianism” is it ovo vegetarian? I eat meat and fish but not often. I try to avoid these foods and I don’t miss them. I make meat dinners when I’m lazy and want to cook something quickly.

Why this is the best for me is cause it makes me feel better. When I haven’t eaten meat for a while I feel less tired. Even my depression gets better. I don’t mean meat is bad but I feel like my body can’t handle it. I sometimes feel like eating steak but then my bowls go through the roof. I get sick.

I don’t know if my depression gets better when I don’t eat meat but I feel better. I think it has to do with my physical health getting better when I’m meat free. I feel like meat is hard on my body.

I have been “strictly vegetarian” for different periods and I have felt better then. It was harder to cut out meat before because then there hardly wasn’t any meat substitutes. The things you could buy were often disgusting. Now there are many ready made vegetarian foods that taste good.

This is my favorite almost vegetarian dinner. Veggie omelette. I add whatever veggies I have available. Tasty!

We don’t eat these schnitzels but someone bought them cause they were on sale. Someone…… not me.

Pangoodies

I didn`t know there were all this types of pancakes. I thought there were the crèpe, swedish pancake, and the american with baking powder. The swedish pancake is like a crèpe. It`s flat and thin. The american pancake is thicker. Anyway there are lots of pancakes.

I like the swedish pancake more than the american. It`s the baking powder in the american I don`t like. I had it when I had brunch long ago and I thought it would taste wonderful. I was disappointed. I think my preference when it comes to food is that it should taste mild and I only like the things I liked when I was younger. Limiting I know.

I never use a recipe when it comes to pancakes. I began going by the smell of the batter to know it was the way it should. Now I`ve made it many times and know how it should be. I couldn`t write about pancakes and not leave any explanation on how to make them. Because of that I tried to think about how much I use of the ingredients.

8 pancakes makes two servings and for that I used

50 gr melted butter (heartattack waiting to happen it’s lots)

4 eggs 

7 dl milk

4 dl flour

Mix all ingredients. The texture should be like a white sauce.

Even with the enormous amount of butter in the batter I put additional butter in the pan for every pancake I make. Every pancake should fill the whole bottom of the pan.

Eat them with jam and whipped cream.

 

Fast salad

20170703_163138.jpgI know the feeling. You come home late and the idea of spending time in the kitchen cooking……no! You only want something quick to eat.

I have had that feeling many times. Every time I come home after a long day I never cook anything complicated. Often I buy pizza or pick out processed food from the freezer that cooks fast. Often I only eat sandwiches but that don’t fill me up. Processed food is fine once in a while but not all the time.

I’m happy I’ve found something rather healthy to eat and it takes no time to cook. Ceasar salad. It’s from Dole. It’s called Ceasar kit and contains sliced salad, crutons, sauce and parmesan cheese. I think you can find it almost everywhere.

I buy cooked chicken at the deli counter to make it into the ceasar in the salad. You don’t have to use chicken anything goes with it. I think everything is tasty in the ceasar kit other than the parmesan cheese. It tastes like feet. The salad doesn’t lack in flavor because I don’t eat the cheese.

 

 

Noodle salad

20170702_153826I don’t think this is a “noodle noodle” salad. Noodle salad has more asian ingredients in it than noodles. I say noodles because they are good when you want a fuller salad. I could never only eat a vegetable salad because that wouldn’t satisfy me.

Salads are convenient when you want to get your daily veggie intake in your dinner. I like it but I need some substance like carbs and protein to go with it. Noodles are delicious and make salads delicious. I often add meat in salads but today I wanted noodles.

This is the dinner idea for today. It takes time to cut all veggies but it’s worth it. The veggies in the salad are salad (surprise), cucumber, tomatoes, peppers, olives and onions. Yummy!

 

Vegan dinner

Today I made a vegan dinner. Everything from the pasta to the sauce was vegan. The only part I don’t know if it’s vegan is the wheat flour in the sauce. Haha I know wheat flour isn’t meat but I never see it in vegan recepies. It must have to do with the wheat but I don’t know how. Green pea pasta with mushroom sauce. Green pea pasta! I’ve never tried that. It’s made from only green pea flour.

I don’t know what to think about the pasta. It doesn’t taste much but regular pasta doesn’t taste much either. There wasn’t much pea taste to it. The consistancy was like pasta. It’s supposed to contain much protein and that’s wonderful. If you’re vegan you will like this but I like “normal” pasta better.

The mushroom sauce was tasty! I don’t know the word for this mushroom, in Sweden it’s called “champinjon”. Anyway I fried the mushrooms (200g) in plantbased butter until they got light brown. I used salt and pepper to give some flavour. Then I added about 1 tbsp wheat flour but use the flour you like! To make it a sauce I added oat milk.
