Nearly vegan

I made a nearly vegan dinner today. Vegan hamburger. I bought the hamburger though. Everything was vegan other than the bun, which I don`t know if it only has vegan things in it. The dressing is a mayonaise dressing that has eggs in it and it’s not vegan. Nearly vegan though.

It was delicious! When I eat hamburgers I make from minced beef I never like them. They have that meaty flavor to it (what else could the taste be???) and it takes over every other thing in the burger. I like the frozen beef burgers you buy but they must be one of the unhealthiest thing there are. The vegan hamburgers I ate to today was the best I`ve had for a long time. They tasted like meat.

If you`re vegan or don`t want to eat meat some days try vegan hamburgers. These are from a swedish brand but there a many other brands that has them.

I fried the burgers in plant based butter. I only put salt and pepper on them. I also fried red onions because I want onions on my burgers. Raw onions are to harsh I think. The buns that I don`t know if they`re vegan were normal hamburger buns.

We didn`t have any salad and I used avocado instead. Avocado tastes like salad in a way. Tomatoes were involved in the bun too. I also had ketchup and mustard (which I don`t know either if they`re vegan). Haha I shouldn`t try to cook vegan when I don`t know anything about it.

Protein salads

There’s no protein in lettuce……..I think. It contains lots of water. And a calming substance. I heard that long ago but I don’t know if I get calmer from salads. The protein in this salad comes from eggs and bacon. Eggs contain protein (we all know that) and are wonderful in salads.

Usually eggs in salads are boiled but I fried mine. I fried the bacon first and then the egg in the bacon fat. Very healthy! Unhealthy but tasty. These are my favorite proteins to add to salads. I exercise often and have to eat balanced. Protein is important because it both fills you up and builds muscles.

The salad also contained lettuce, tomatoes, cucumber, peppers, olives and red onions. I made a dressing from olive oil and applecider vinegar. Tasty!

Fast salad

20170703_163138.jpgI know the feeling. You come home late and the idea of spending time in the kitchen cooking……no! You only want something quick to eat.

I have had that feeling many times. Every time I come home after a long day I never cook anything complicated. Often I buy pizza or pick out processed food from the freezer that cooks fast. Often I only eat sandwiches but that don’t fill me up. Processed food is fine once in a while but not all the time.

I’m happy I’ve found something rather healthy to eat and it takes no time to cook. Ceasar salad. It’s from Dole. It’s called Ceasar kit and contains sliced salad, crutons, sauce and parmesan cheese. I think you can find it almost everywhere.

I buy cooked chicken at the deli counter to make it into the ceasar in the salad. You don’t have to use chicken anything goes with it. I think everything is tasty in the ceasar kit other than the parmesan cheese. It tastes like feet. The salad doesn’t lack in flavor because I don’t eat the cheese.

 

 

Noodle salad

20170702_153826I don’t think this is a “noodle noodle” salad. Noodle salad has more asian ingredients in it than noodles. I say noodles because they are good when you want a fuller salad. I could never only eat a vegetable salad because that wouldn’t satisfy me.

Salads are convenient when you want to get your daily veggie intake in your dinner. I like it but I need some substance like carbs and protein to go with it. Noodles are delicious and make salads delicious. I often add meat in salads but today I wanted noodles.

This is the dinner idea for today. It takes time to cut all veggies but it’s worth it. The veggies in the salad are salad (surprise), cucumber, tomatoes, peppers, olives and onions. Yummy!

 

Vegan dinner

Today I made a vegan dinner. Everything from the pasta to the sauce was vegan. The only part I don’t know if it’s vegan is the wheat flour in the sauce. Haha I know wheat flour isn’t meat but I never see it in vegan recepies. It must have to do with the wheat but I don’t know how. Green pea pasta with mushroom sauce. Green pea pasta! I’ve never tried that. It’s made from only green pea flour.

I don’t know what to think about the pasta. It doesn’t taste much but regular pasta doesn’t taste much either. There wasn’t much pea taste to it. The consistancy was like pasta. It’s supposed to contain much protein and that’s wonderful. If you’re vegan you will like this but I like “normal” pasta better.

The mushroom sauce was tasty! I don’t know the word for this mushroom, in Sweden it’s called “champinjon”. Anyway I fried the mushrooms (200g) in plantbased butter until they got light brown. I used salt and pepper to give some flavour. Then I added about 1 tbsp wheat flour but use the flour you like! To make it a sauce I added oat milk.

Salad

20170526_161858.jpgMake dinner is easy. When you know what to make. I think we all have struggled with what to make. I don’t know many times I’ve been standing in the kitchen looking through every cupboard for ideas.

During the summer I think it’s easier when you can eat salad. Salad is good all year round but it’s best when it’s warm. There’s many variations when it comes to salad. I often make a protein and carb filled salad because otherwise I don’t feel full. I could never only eat salad leafs!

The salad I like at the moment is chicken and pasta salad. I mix pieces of grilled chicken with lemon mayonaise and salt and pepper. That is tasty! The pasta is boiled and mixed with butter and salt and pepper.

The vegetables are fresh spinach, tomatoes, peppers, cucumber, olives and onion.

 

 

 

Snack

I have to eat in the evening. Sometimes I’m more hungry than usual and then this is good!

Meatball sandwich! Toasted bread with beetroot salad and sliced meatballs. Beetroot salad consists of pickled beetroots and mayonaise.

Pudding

I love black pudding. I never think about the content when I eat it. In Sweden we call it “blood pudding”. It contains animal blood but it doesn`t taste of it.

The black pudding comes in a big chunk. You slice it and fry it. I want thin slices because otherwise it gets a bit too much to chew. I always fry black pudding until it gets a crunchy surface. It tastes better that way.

I must have bacon with black pudding. I like it the way it is but with bacon it`s better. Lingonberry jam is important. Black pudding needs that.

Pasta

I love pasta. It makes everything taste good. I think pasta is under rated these days. Everytime it’s talked about it has to do with that it contains too much carbs. You need both carbs and protein but carbs have become something bad.

Like pasta I find comfort food under rated. Today all restaurants serve “new” food but it’s hard to find uncomplicated things. In Sweden we have something called “husmanskost” which is food that has been around for long. It’s food like boiled pork and fried pork with onion sauce. Everyone is crazy about it but it’s hard to get when you’re out to eat.

Pasta bolognese has become “husmanskost” and it’s no restaurant that serve it. They do but there is always something “new” to it. It can be that the sauce is made with pickled meat or onion and it doesn’t taste right. Today I made pasta bolognese. Simple bolognese. Minced beef with tomatoe puree, milk, cream and onions. I always use milk to make it into a sauce. Water is too thin I find. I used to add water but milk is better. Cream gives is a good taste.

I used to be bad at making bolognese sauce. Now I’ve learned and I think there are two important factors that makes a successful bolognese.

*”Boil” the liquid out of the minced meat before you add the rest of the ingredients.

*If you put tomatoe puree in the sauce let it cook for a while in the pan with the meat before adding liquid.

Weight

I`ve lost lots of weight. I don`t mean that in a good way. I`ve been taking less and less of the anti depressant medicine and it shows. I lost my appetite early and it`s gone now. I have to force myself to eat which isn`t easy. Don`t get angry at me all you that are trying to loose weight. I hate being this thin.

I`ve begun eating snacks in the middle of the night. I have an appetite then and snacks are the easiest way to fill me up. It`s crazy but I`m happy I eat something. I get up in my underwear and eat everything that`s unhealthy. Not only snacks, cakes are fine too. I sit in the dark and stuff myself. I have done that sometimes before but now I do it every night.

Today I made a weight gainer dinner. Lots of pasta, butter and cream. I have to get calories where I can and that dinner was filled with it.

I boiled fresh pasta and onion. I boiled the onion because I wanted it to be soft and not crunchy. The taste doesn`t disappear in the water but it gets milder.

After the pasta was done I put it in the pan again. I added LOTS of butter. I also added tinned tomatoes and LOTS of cream. The whole thing cooked for a while.
